Vine variety: 100% Nero di Troia

Geographical rea of production: Cerignola contryside and the neighbouring towns.

Yield per hectare: 80/90 ql

Harvest: from the second decade of October.

Wine making: as they reach the wine cellar grapes are immediately destemmed and crushed by a crusher-stemmer at a controlled temperature of around 23°25°c, for a period of ten days. The crashed grapes are afterwards placed in a soft press and the wine obtained ages in stainless stell barrels. In wine-making great attention is paid to the evolution of tannins and to the total acidity, which are crucial parameters in the grapes of Troia, as they enhance the vine typicality and its territory. After careful tasting, the wine is bottled and must rest for about three months prior to marketing.

Organoleptic characteristics: intense ruby red color with purple reflexes, red fruit bouquet with hints of licorice. Pleasant, enveloping and weel-balanced flavor. Long intense finish.

Wine and food pairings: ideal with baked dishes, red meats and ripe cheese. Serve at a temperature of 18°c .
